Sheetcake with Apricots and Astaka Dates
Ingredients for a baking dish or a small baking sheet:
- 5 apricots
- 5 Astaka dates
- 200 g spelt flour
- 1 tsp baking powder
- 80 g coconut sugar
- 80 ml sunflower oil
- 150 ml soy milk
- 1 tbsp cider vinegar
- 2 tbsp granola or nuts
- Preheat the oven to 180° C. Lightly grease the baking dish or sheet. Wash the apricots and divide them into quarters. Pit the Astaka dates and cut them in half.
- In a bowl, mix all dry ingredients. Then add the soy milk, sunflower oil, and cider vinegar and briefly mix to obtain a dough.
- Transfer the dough to the baking dish or sheet, spread evenly, and garnish with the apricots and dates.
- Bake for about 30 minutes.
Tip: For a crunchy topping spread 2 tablespoons of granola or nuts on the cake before baking.
