Base:
1.5 cup oats
¼ cup buckwheat
3/4 cup almonds (or walnuts)
½ banana
½ cup dates
1 tbsp coconut oil (or nut butter)
Filling:
2 cups chopped dates
½ cup water
½ tsp salt
1 tsp vanilla extract
Blend all the base ingredients and press the ¾ of it in a square pan covered with parchment paper. Put it in the freezer.
Put all the ingredients for the filling in your blender and pulse until it has a smooth consistency. You can add some water if needed.
Spread the date mixture on the base and sprinkle the ¼ left on top of it!
Let in the fridge for 3 hours and then, cut it in squares. (You can let it for less than 3 hours, but it could be difficult to cut without making a mess)
Keep them in your fridge for 1 week or in your freezer for a longer time!
