Can you already smell the irresistible smell of hot muffins coming out of the oven? This recipe is spiced with cinnamon and sweetened with our delicious dates.
This recipe for fruit muffins is a success and very easy to prepare.
Recipe for 15 muffins
Preparation time: 15 minutes / Baking time: 20 minutes
Ingredients:
- 2 cups flour
- 1/2 cup cane sugar
- 1/2 cup oatmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 banana
- 1/2 apple
- 2 handfuls Sukari cooking dates
- 2 eggs
- 1 unsweetened yogurt
- 1/2 cup milk
- 1/4 cup melted butter
Directions:
Preheat the oven to 180 °C
- In a large bowl, mix flour, sugar, oatmeal, baking powder and baking soda. Add the Sukari and crumble everything between your fingers. Crush the dates with your fingers into small pieces and make sure that no whole dates remain.
- In the bowl of the robot, mix the eggs until they whiten. Add the crushed banana and the 1/2 apple cut into small cubes. Add the milk and melted butter. Gradually add the mixture of powders + dates to the liquid mixture.
- Put the dough into 15 small muffin cups (3/4 full) and bake for 20 minutes. Let the muffins cool before eating.
This date muffin recipe can be easily translated into a vegan version.
