Ingredients for the base:
- 1 ½ cup pitted Mabroom dates
- ½ cup Brazil nuts
- ½ cup sunflower seeds
- 2 tbsp coconut oil
- 1 tbsp cocoa
- 1 pinch of salt
Ingredients for the filling:
- 1 ¼ cup cashew nuts
- ½ cup coconut milk
- 1/3 cup maple sirup
- Juice of one lemon
- Vanilla extract
- 1 small espresso
- 2 scoops salted caramel protein powder
Preparation:
- Base:
Mix the ingredients for the base in a blender until you get a smooth, sticky dough. Put 1 ½ tbsp of the dough into each muffin cup and press down to make an even base.
- Filling:
Mix the ingredients for the filling. Put the mixture into the muffin cups. Let freeze overnight. Take them out of the freezer two hours before you plan to eat them.
